Lentils with apricots

This dish has a beautiful spicy sweetness to it.  It makes a warming and filling winter meal.  You can serve with bread or rice.  You can also add more liquid to make it into a soup.


Ingredients


2 cups of red lentils

6 juicy apricots (from vacuum pack)

4 cups of water

(or you can use yellow split peas also know as chana dal)

1 chopped onion

3 cloves of garlic, chopped

Chopped fresh Ginger

Tsp Cumin

Tsp Coriander

Cayenne pepper

Tsp Turmeric

Vegetable bouillon or salt



Method


Chop and fry onions until soft

Fry cumin seeds for a few seconds (stirring)

Add chopped garlic and ginger

Add spices: coriander, cayenne & turmeric (according to taste)

Add lentils (stirring)

Add water (vary amount according to preference)

Stir in vegetable stock or bouillon (according to taste)



Bring to boil

Add chopped apricots

Then simmer until lentils are soft (30-40 minutes)
