Ingredients


One quite firm avocado

Handful of spinach leaves

Handful of watercress

One fresh tomato

Four previously soaked sun-dried tomatoes

One/two spring onions

Lemon juice


Method


On a bed of roughly torn spinach and watercress place slices of fresh tomato

Then chopped spring onion

Then sliced avocado

Finish by sprinkling chopped sun-dried tomatoes

Add a squeeze of lemon juice and season to taste

Nori sheets can be found in supermarkets and health food shops. They are the green seaweed wraps that hold sushi together.  It makes a great salad just eaten on its own it also goes well in crusty bread or wraps etc.
