Vegan Winter Feast
Here’s one of my favourite dishes
Ingredients
Brown rice or quinoa – cooked
Chopped onion
Chopped garlic
Chopped ginger
Spices (coriander, cumin, turmeric, cayenne, etc.)
Green beans, carrots
Kidney beans, broad beans, chick peas, etc.
Pumpkin, sunflower, sesame seeds, linseeds, etc.
Spinach leaves
Seasoning: bouillon or other vegetable stock
Method
1)Fry onions in oil until soft
2)Add garlic and ginger
3)Stir in spices
4)Add seeds
5)Add green beans and carrots and/or other crunchy veg.
6) Add a little water and cook for a few mins. on low heat
7)Stir in rice
8)Add spinach leaves
9)Season, if required, with bouillon or salt, pepper, etc.
10)Squeeze of lemon juice
11)Serve
